Jill’s Italian Chicken
Whole Chicken, cut up and skin removed
Olive oil spray
1 small onion, chopped
2 small carrots, chopped
2 ribs celery, chopped
28 oz. canned, diced tomatoes
2 teaspoons/cloves of minced garlic
½ bell pepper, chopped
(if you have some mushrooms, slice and add (about ½ cup)
S&P to taste
In the Instant Pot
Spray with olive oil
Set pot on “Saute” function and heat.
Add vegetables and saute for approximately 3-4 minutes. While sauteeing, add approximately ½ teaspoon dried rosemary, ½ teaspoon Italian seasoning, ¼ teaspoon garlic powder S&P to taste.
Remove from pot.
Spray pot once again.
Add cut-up chicken and brown on both sides. While browning, sprinkle with garlic powder, S&P.
Remove from pan. Lay down sautéed vegetables, add chicken back to pot. Sprinkle with garlic, an additional ½ teaspoon rosemary, ½ teaspoon Italian seasoning. Add red flake chili if desired, and to taste. Pour the tomatoes over all.
Place lid on pot, making sure venting knob is on “sealed.” Switch pot to “Manual” function and set timer for 15 minutes.
Once 15 minutes is up, let sit for 5-10 minutes and then quick release. Yum factor—10.
As delicious as this tasted on the night I made it, it actually tasted better the following day.
